| Hey adonis to answer your question, scales and keys can change during the song if you want it to, but it doesn't have to. And each instrument should be in the same key and use the same scale at the same time (although if you wanted to be really creative and abstract and whatever, you could even use different scales at the same time, which doesn't really sound good to me at least with the clashing notes and all that).
Also, with chord progressions, scales can kind of change within the overall key maybe from bar to bar, but I'm not very good with that so...
